As part of a student project at the Burgenland University of Applied Sciences, the consumer quality criteria for sparkling wines were analysed between September 2016 and February 2017. As the most important quality criterion for wine in general and sparkling wine in particular in the European Union, origin was tested against other quality characteristics from the consumer perspective and checked for validity.
Using a random sample of more than 400 consumers from all over Austria, the factors of origin, production, marketing and sensory characteristics were evaluated confirmatory and differences in the place of purchase, willingness to pay, frequency of consumption and the type of sparkling wine consumed, e.g. sparkling wine, champagne, prosecco or cocktail mixes, were determined.
